The Cows · Page 6

Dark, long-horned cattle and a calf stand under a full moon.

Our horns spiraled like antennae capturing the subtle energies of the universe.*

Our four stomachs transformed the coarse fibers of plants, unfit for other animals, and turned them into rich black soil that fed all creatures in the chain.

*of life

The cow, like other ruminants, has four stomachs that allow it to digest plant fibers of comparatively low energy value that humans cannot use as food.

Their digestion has evolved with the grasslands and fills a particular niche in the ecological system of those grasslands.

When we feed cows things like cereals or straw dipped in ammonia, nuggets containing soybean meal, and silage, they get indigestion, which ultimately ruins their health and the health of those who feed off the milk and meat they produce.
