The Cows · Page 23

Cattle crowded into feedlot pens around a round slurry pit, seen from above.

We stand accused of polluting the atmosphere with our bad digestion, and the water with our slurry.

Industrial agriculture increases the carbon dioxide in the atmosphere by cultivating the soil on a massive scale.

Cows on pasture do the opposite; they help to sequester carbon – that is, they increase the fixing of carbon dioxide in the soil when correct grazing practices are used.

They stimulate its rapid regrowth by eating and trampling the grass in high-density herds and then moving on. In this process, the grass draws the carbon dioxide out of the air to grow.
